Ingredients:


Pancakes
  • 2 cups unbleached premium wheat flour
  • 3 tablespoons of sugar
  • 1/2 tsp salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tbsp. sour milk or kefir
  • 2 eggs category CO
  • 1/4 cup melted and cooled unsalted butter, plus extra for frying
  • Vegetable oil for frying
  • Chopped pecans, for topping pancakes
  • Callie's Mama Syrup, for serving, see recipe below

Mama Callie's Syrup
  • 3/4 cup water
  • 1 cup light brown sugar
  • Salt on the tip of a knife
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 90°C.

    In a large bowl, combine flour, sugar, salt, baking powder and baking soda.

    Pour the yogurt or kefir into the second bowl, add the eggs, cooled melted butter and mix well.
  • Step 2
  • Make a well in the center of the dry ingredients and add the wet mixture. Mix thoroughly with a silicone spatula. Don't overmix, or you'll end up with tough, rubbery pancakes.
  • Step 3
  • Heat a large electric skillet or nonstick frying pan over medium heat. Add a few drops of vegetable oil and a knob of butter. Once the butter has melted, wipe the pan with a paper towel.
  • Step 4
  • For each pancake, scoop 1/4 cup of batter into the pan. Sprinkle each pancake evenly with chopped pecans. Cook the pancakes until bubbles begin to pop on the surface, about 3 minutes. Flip them over and continue cooking until the other side is golden brown, about 2 more minutes. Repeat with the remaining batter.
  • Step 5
  • Place the finished pancakes on a baking sheet and place in the oven to keep them warm.

    Place pancakes on individual plates and serve with syrup.

    Mama Callie's Syrup


    In a medium saucepan, add water, brown sugar, and salt and place over medium heat. Bring the mixture to a boil and stir until the sugar dissolves. Simmer for 25-30 minutes, stirring occasionally. Cool before serving. Yield: 3/4 cup.
