Ingredients:


Pancakes
  • 1 cup flour
  • 1 cup whole grain flour
  • 4 tsp baking powder
  • 2 tbsp. l. brown sugar
  • 1 teaspoon cinnamon
  • A pinch of nutmeg
  • 2 cups of milk
  • 4 teaspoons melted butter, plus more for greasing the pan
  • 2 eggs
  • 1 sweet potato, cooked until tender, peeled and mashed
  • Pecan Butter, recipe below
  • Maple syrup for serving

Nut butter
  • 1/4 cup finely chopped pecans, toasted and cooled
  • 225 g softened butter
  • 1/2 tsp cinnamon
  • 1 teaspoon vanilla
  • 1 tbsp. brown sugar
  • 1 tbsp. honey
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Pancakes


    Combine all ingredients in a large bowl. Whisk until smooth. Cook the pancakes in batches in an oiled skillet over medium-high heat until bubbles appear on the surface. Then flip and fry until golden brown. Serve the sweet potato pancakes with maple syrup and nut butter.

  • Pecan Butter


    Combine all ingredients. Wrap in parchment paper and place in the freezer. Slice and arrange on top of the sweet potato pancakes.
