German-style potato pancakes - a detailed recipe.


Ingredients:

  • 1 large baking potato (about 225 g)
  • 1/2 medium onion (about 110 g)
  • 1 egg
  • 1 tbsp chopped parsley
  • 1 tbsp. wheat flour
  • 1 tbsp. breadcrumbs
  • 1/4 tsp dried thyme
  • Juice of 1 lemon
  • Salt and ground black pepper
  • Oil for frying
  • 1/3 cup applesauce for filing
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Using a food processor or a grater, coarsely grate the potatoes and onion into a bowl. Using your hands, squeeze out any excess liquid and place the dry potato-onion mixture in the bowl. Add the egg, parsley, flour, breadcrumbs, thyme, lemon juice, and seasonings. Mix well.
  • Step 2
  • Heat 1/2 cup oil in a heavy skillet. Drop 1/2 cup of the potato mixture into the hot oil and press into a 2 cm thick pancake. Reduce heat to medium. Cook for 5 minutes per side, until crisp and golden. Serve with applesauce.
