Sunny Anderson made these devilishly delicious pancakes with Spooky Blueberry Syrup for Halloween, but they're perfect anytime, especially for Sunday brunch. All you need to make ordinary pancakes extra special is sprinkle them with Snickers bar pieces while frying. Homemade blueberry syrup doesn't take much time either. It's quick to make, and it makes the pancakes even more delicious.

Ingredients:


Pancake
  • 1 cup premium flour
  • 1 tbsp. sugar
  • 2 tsp baking powder
  • Coarse salt
  • 2/3 cup milk
  • 2 tablespoons of vegetable oil
  • 1 egg, beaten
  • 4 tablespoons butter, divided into 4 equal parts
  • 1 chocolate bar, such as Snickers, cut into pieces

Creepy Blueberry Syrup
  • 4 cups blueberries, sorted
  • 0.5 cups of sugar
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 0.5 tbsp. maple syrup
  • Coarse salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, combine the flour, sugar, baking powder, and a pinch of salt. Stir until evenly distributed. In a smaller bowl, combine the milk, butter, and egg. Make a well in the center of the flour mixture and pour in the liquid mixture. Using a wooden spoon, gently knead until the dough is smooth. Let the dough rest for 5-10 minutes.
  • Step 2
  • Make pancakes:

    Place 1 tablespoon of butter in a large skillet and let it melt over low heat. Then increase the heat to medium-high. Scoop 1/4 cup of batter into the skillet. Let the pancake set slightly on the bottom, then sprinkle the chocolate bar pieces on top. When bubbles begin to form around the edges and center, flip the pancake and cook until the bottom is golden brown.
  • Step 3
  • Fry the pancakes in batches, adding more butter if necessary, until the batter is used up. Preheat the oven to 40°C (104°F). Serve with Creepy Blueberry Syrup.

  • Creepy Blueberry Syrup:
    Yield: 1.5 cups

    In a saucepan, combine the blueberries, 1 cup water, sugar, lemon zest, and juice. Bring to a boil over medium heat, stirring constantly, until the sugar dissolves. Reduce heat and simmer until the liquid thickens into a syrup, about 10 minutes. Use a wooden spoon or potato masher to break up the blueberries as they cook. Once the juices have thickened, remove from heat and stir in the maple syrup. Taste and add a pinch of salt. Serve warm.
