Treat yourself to a delicious breakfast, even if you're on the keto diet. These fluffy, golden pancakes are made with a blend of almond and coconut flours, coconut milk, cream, and eggs. Add ground macadamia nuts, coconut flakes, and lemon zest, and your diet pancakes will be even more delicious and flavorful than traditional pancakes. Sweeten them with erythritol instead of sugar. Fry the pancakes small to ensure they hold together better. Serve warm.


Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 tsp confectioner's erythritol (see note)
  • 1 teaspoon baking powder
  • 1/4 teaspoon coarse salt
  • 0.5 cups unsweetened coconut milk
  • 1/4 cup heavy cream
  • 1 tbsp unsalted butter, melted and cooled, plus extra for greasing
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 tbsp toasted coconut flakes, sweet
  • 2 tablespoons toasted chopped macadamia nuts
  • Zest of half a lemon
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, combine almond and coconut flours, erythritol, baking powder, and salt.
  • Step 2
  • In a separate bowl, combine coconut milk, cream, butter, vanilla extract, and eggs. Pour the liquid mixture into the flour mixture and knead into a dough. Add the coconut flakes, nuts, and lemon zest. Let the dough rest for 10 minutes.
  • Step 3
  • Heat a large nonstick skillet over medium heat. Add enough oil to coat the bottom of the pan. Drop 2 tablespoons of batter into the pan and use the back of a spoon to flatten into 8-cm circles. Cook until the pancakes are golden brown on the bottom and puffed up, about 3 minutes.
  • Step 4
  • Flip and cook on the other side until golden brown and cooked through, about 2 more minutes; transfer to a plate. Repeat with the remaining batter. Serve the pancakes warm.

    Note

    Erythritol is a sugar substitute that can be found in most health food stores or online.
