This healthy and nutritious smoothie, similar to mint ice cream with chocolate chips, is perfect for breakfast and a real treat for those on the keto diet. It's ready in minutes. The base is coconut milk and a splash of plain yogurt. Blend it with ice, mint leaves, and spinach, then stir in cacao nibs for a chocolate-like texture. Sweeten with erythritol if desired. This drink is a great pick-me-up and a quick mood lifter with its charming appearance and refreshing taste.


Ingredients:

  • 1 cup unsweetened coconut milk
  • 0.5 cups tightly packed small spinach leaves
  • 0.5 cup plain whole milk yogurt
  • 1/4 cup tightly packed fresh mint leaves
  • Half an avocado
  • 1 - 1.5 cups of ice
  • 2 - 3 tablespoons erythritol-based sweetener*
  • 1 tbsp. crushed cocoa beans, plus extra for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine coconut milk, spinach, yogurt, mint, avocado, 1 cup ice, and 2 tablespoons erythritol in a blender and blend until smooth. Taste and add more ice or sweetener if needed. Add the cacao nibs and blend until evenly distributed.

  • Pour into glasses, sprinkle with cocoa nibs and serve immediately.

    Note *

    The sugar substitute erythritol can be found in most health food stores or online.
