Fluffy American pancakes are a cross between traditional crepes and pancakes. However, they have a rather unique flavor. A stunning stack of hot pancakes, with a melting piece of butter on top and golden syrup dripping down—it's definitely not something you'll hesitate to eat.


Ingredients:

  • 1.5 cups of flour
  • 3 tablespoons of sugar
  • 1 tbsp. baking powder
  • 1/4 teaspoon salt
  • 1/8 tsp ground nutmeg
  • 2 large eggs at room temperature
  • 1.25 cups milk at room temperature
  • 1/2 tsp vanilla extract
  • 3 tbsp (45 g) butter for the dough, plus more as needed
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, whisk together flour, sugar, baking powder, salt, and nutmeg.
  • Step 2
  • In another bowl, beat the eggs, then whisk in the milk and vanilla extract quickly.

  • Melt the butter in a large cast iron skillet or griddle over medium heat.
  • Step 4
  • While whisking, pour the butter into the milk mixture. Add the liquid ingredients to the dry ingredients. Beat until a thick dough forms, but not longer.

  • In a skillet over medium heat, pour about 1/4 cup of batter for 2 or 3 pancakes, spacing them evenly. Cook until bubbles appear on the surface and the bottoms are golden brown, about 2 minutes. Then flip with a spatula and cook for about 1 minute on the second side. Serve immediately or transfer to a platter and cover with foil to keep the pancakes from cooling too quickly. Repeat with the remaining batter, adding more oil to the skillet as needed.

  • Pancakes with seasoning: Once bubbles appear on the surface, sprinkle the pancakes with sliced ​​or diced fruit, chocolate chips, nuts, etc. Turn with a spatula and cook for another 1 minute, being careful not to let them burn.
