A sweet-tart glaze of natural maple syrup, grainy mustard, and red wine vinegar doubles as a marinade and sauce for grilled steak. The meat is marinated in the mixture for a few minutes, then grilled in the oven until it develops a beautiful, shiny crust. For a side dish, roast endive quarters in the oven. Its natural bitterness will perfectly complement the marinade's flavor.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 700 gr. flank steak
  • 2 tbsp grainy mustard + extra for serving
  • 2 tbsp. l. olive oil
  • 0.5 tbsp. maple syrup
  • 3 tablespoons red wine vinegar
  • 4 small heads of endive
  • 1 teaspoon freshly squeezed lemon juice
  • Fresh parsley, for serving

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C.
  2. Mix the mustard and olive oil with a fork. Add the maple syrup, vinegar, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper and stir quickly. Season the steak with salt on both sides and pour half of the marinade over it. Let it marinate at room temperature for about 15 minutes.

  3. Meanwhile, wash the endive, pat dry, and quarter it, keeping the leaves attached to the stem. Place the endive on a baking sheet, drizzle with olive oil, and season with salt to taste. Bake until the endive begins to soften and brown around the edges, about 15 minutes. Drizzle with lemon juice and sprinkle with parsley.
  4. Turn the oven to broil mode. Place the steak under the broiler and broil for 4 minutes. Flip and broil until well-browned and an instant-read thermometer inserted into the steak reads 115°F (43°C), about 4 minutes more per side. Let rest for 10 minutes before slicing.
  5. Slice the steak across the grain and pour the remaining marinade over it. Serve with endive and mustard.
