Natural bone-in pork loin cutlets cook quickly in the oven using the grill setting, and the delicious flavor and crispy crust are achieved with a sweet and tangy tomato glaze that coats the meat while grilling. Chipotle peppers added to the sauce impart a light smoky flavor and a pleasant spiciness, while the natural sweetness of maple syrup balances the flavor. Set some of this sauce aside for serving. Serve the pork with potato salad or mashed potatoes and poached spinach.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 natural pork chops on the bone, 2 cm thick (about 700 g total)
  • 0.5 cups lightly salted chicken broth
  • 2 tablespoons apple cider vinegar
  • 2 tbsp. maple syrup
  • 1 tablespoon finely chopped chipotle pepper in adobo sauce
  • 1 teaspoon chili powder
  • 1 can (425g) of tomato sauce
  • 1 clove garlic, finely chopped
  • Potato salad or mashed potatoes with steamed spinach, for serving

Cooking the dish according to the recipe:


  1. In a medium saucepan, combine the chicken broth, vinegar, maple syrup, chipotle adobo, chili powder, tomato sauce, garlic, a generous pinch of salt, and some freshly ground black pepper and bring to a boil over medium heat. Reduce the heat to medium-low and simmer, stirring occasionally, until the sauce thickens, about 25 minutes. Set aside 1/2 cup of the sauce for serving.
  2. While the sauce is simmering, position the oven rack 10 cm from the heating element and preheat the oven to broil. Place a cast iron skillet or foil-lined baking sheet under the broiler and heat for 5 minutes.

  3. Season the pork chops with salt and black pepper, place them in a preheated skillet, and brush with the sauce. Cook the pork, brushing them with the sauce 2-3 more times, until cooked through and browned, about 8 minutes (do not turn). Serve the pork chops with potato salad or mashed potatoes, poached spinach, and the reserved sauce.
