All-natural double-bone pork loin cutlets are rubbed with a spice blend before grilling, including coriander, ground cumin, mustard powder, smoked paprika, and chipotle powder, imparting a pleasant smoky flavor. Grilling requires both direct and indirect heat, as the cuts of meat are first seared until crispy and then slowly moved away from the coals. The thickness of these double-bone cutlets ensures a juicy interior, and the portions are even more appetizing.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 tbsp coarse salt
  • 1 tbsp. coriander seeds, crushed
  • 1 tbsp chipotle chili powder
  • 0.5 tbsp. l. ground cumin
  • 0.5 tbsp. l. smoked paprika
  • 3/4 tsp mustard powder
  • 6 natural double-bone pork cutlets, 280-340 g each
  • 3 tbsp. l. olive oil

Cooking the dish according to the recipe:


  1. Preheat a charcoal grill using two heat zones: direct and indirect.
  2. In a small bowl, combine the salt, coriander, ground chipotle pepper, cumin, paprika, and mustard powder. Pat the bone-in patties dry with paper towels and rub both sides with the spice mixture. Then, rub the outside with olive oil.

  3. Grill the patties on the hot side of the grill until crispy, about 4 minutes per side. Then transfer the pork to the cooler side of the grill, cover, and grill until the internal temperature reaches 140°F (60°C), 10-12 minutes. Transfer the patties to a cutting board, let rest for 5-10 minutes, and then serve.
