Natural bone-in pork loin cutlets are perfect for grilling. To ensure the tender meat doesn't dry out and delivers not only beautiful grill marks but also juiciness, grill them no longer than the recipe calls for and remove them from the grill when the meat is still slightly pink at the bone. While grilling, also add a few halved ripe plums. They'll caramelize slightly and make a wonderful garnish for the pork when added to an arugula and parsley salad, seasoned with lemon juice and olive oil.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 natural bone-in pork chops (about 1.3 kg total)
  • 1 tbsp + 2 tsp extra-virgin olive oil + extra for greasing the grill grate
  • 2 plums, halved and pitted
  • 4 cups fine arugula
  • 1/3 cup fresh parsley
  • Juice of half a lemon

Cooking the dish according to the recipe:


  1. Preheat the grill to medium-high heat. Generously season the pork chops with salt and pepper on both sides. Lightly brush the grill grate with olive oil. Grill the pork chops until grill marks appear, about 6 minutes. Flip and continue grilling until the meat is still slightly pink near the bone, another 4 to 5 minutes. Transfer the pork to a cutting board and let the meat rest for about 5 minutes.
  2. Meanwhile, toss the plums with 2 teaspoons of olive oil and season with salt and pepper. Grill, turning once, until grill marks appear, about 2 minutes per side. Cut the plums into wedges.

  3. Toss the arugula and parsley with lemon juice and the remaining 1 tablespoon of olive oil, season with salt and pepper to taste. Divide among four plates and top with plum wedges. Serve with the pork chops.
