Instead of traditional cuts, thread pieces of ham, sausage, and bacon onto wooden skewers and grill in the oven, brushing them with a glaze of maple syrup, cayenne, and black pepper. Its savory-sweet flavor pairs beautifully with meats and smoked meats.

Thread a small piece of Black Forest ham, white sausage, or bratwurst, and bacon onto 12 small skewers. Bake on a foil-lined baking sheet at 450°F (230°C) until the sausages begin to brown, about 10 minutes. Combine 3 tablespoons maple syrup with a pinch of cayenne pepper; brush both sides of the skewers with the glaze and sprinkle generously with coarsely ground black pepper. Continue baking until the bacon is crisp, another 7 to 9 minutes. Brush with the remaining glaze and sprinkle with more black pepper.
