Summer berry season is the perfect time to make healthy yet sophisticated desserts that are perfect for breakfast, like these parfaits. Layer crunchy granola, plain unsweetened yogurt, fresh berries, and a dash of maple syrup in clear cups. Repeat the layers until you're done. Nancy Fuller suggests making healthy homemade granola with dried fruit, almonds, oats, coconut, honey, and plain maple syrup. Any leftover granola after assembling the parfaits can simply be poured with milk and enjoyed.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Granola

  • 2 cups of oatmeal
  • 1.5 cups whole almonds
  • 3/4 cup coconut flakes
  • 1/4 cup vegetable oil
  • 0.5 cups honey
  • 0.5 cups dried cherries
  • 0.5 cups dried cranberries
  • 0.5 cups dried pineapple pieces
  • 0.5 tbsp. maple syrup

Parfait

  • 4 cups plain yogurt
  • 4 cups assorted berries (raspberries, blueberries, strawberries, cut into quarters)

Cooking the dish according to the recipe:


  1. Preheat oven to 175°C.
  2. Granola:

    Combine oats, almonds and coconut on a baking sheet lined with a silicone baking mat.

  3. In a liquid measuring cup, combine the vegetable oil and honey. Pour over the oatmeal mixture. Stir to coat completely. Season with salt to taste.
  4. Bake until golden brown, 40-45 minutes. Remove the granola from the oven and let cool. Stir in the dried cherries, cranberries, and pineapple chunks. Drizzle with a little maple syrup and toss to combine.
  5. Assembling the parfait:

    Line up eight parfait glasses. Place a generous dollop of granola in each, followed by a layer of yogurt, followed by a layer of berries and a drizzle of maple syrup. Repeat the layers again, finishing with berries drizzled with maple syrup.
