Recipe:

Place 12 ounces (350 g) of fresh or frozen cranberries in a saucepan, and set aside 1/2 cup (1/2 cup) in a small bowl. Add 1 cup (1/2 cup) of sugar, 1 strip of orange or lemon zest, and 2 tablespoons (2 tablespoons) of water to the saucepan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes.

Increase the heat to medium and cook until the berries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Puree 1 cup of raw cranberries in a food processor and add to the cranberry sauce. Add 1 thinly sliced jalapeño pepper, 1 tablespoon of lime juice, and 1 teaspoon each of honey and salt. Let the sauce cool to room temperature. Before serving, garnish with 2 tablespoons of chopped cilantro.
