To give a simple cauliflower side dish a richer, more sophisticated flavor, roast the florets in the oven and sprinkle them with a mixture of equal parts grated Parmesan and Gruyere cheese one minute before they're done. The cauliflower will be coated in the delicious melted cheese, making it even more delicious. It's perfect as a side dish for festive meats or for everyday meals. Sprinkle with fresh parsley and serve hot to enjoy the gooey cheese.


Ingredients:

  • 1 large head of cauliflower
  • 3 tbsp. l. olive oil
  • 1 tbsp. freshly grated parmesan (60 gr.)
  • 1 tbsp. freshly grated Gruyère (60 g)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • Remove the outer green leaves from the cauliflower and cut the head into florets, discarding the stems. Place the florets on a baking sheet. Drizzle with olive oil and season generously with salt and pepper. Toss well.
  • Step 3
  • Bake for 30 minutes, stirring once, until the cauliflower is tender and beginning to brown. Sprinkle with Parmesan and Gruyère and bake for another 1-2 minutes, until the cheese is melted. Season with salt to taste and serve hot.
