This baked cauliflower appetizer is a lighter alternative to chicken wings, as it tastes just like the beloved Buffalo sauce: spicy garlic Sriracha and butter, and it's also finger-friendly. Don't forget to serve it with a dipping sauce of cool sour cream and blue cheese.

Ingredients:


Buffalo cauliflower
  • 8 cups cauliflower florets (about 1 medium head)
  • 2 tbsp (30 g) butter
  • 1/4 cup Sriracha hot garlic sauce
  • 1 tbsp. freshly squeezed lemon juice
  • 2 tbsp. l. olive oil
  • Coarse salt

Cheese dip sauce
  • 1/3 cup low-fat sour cream
  • 2 tablespoons crumbled blue cheese
  • 1 tbsp. l. skim milk
  • 2 teaspoons mayonnaise
  • Coarse salt and freshly ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 205°C.
  • Step 2
  • For the cheese sauceIn a small bowl, combine sour cream, blue cheese, milk, mayonnaise, 1/3 teaspoon salt, and a few grinds of pepper. Cover and refrigerate for about 30 minutes.
  • Step 3
  • For buffalo cauliflowerMeanwhile, melt the butter in the microwave on high power. Add the hot sauce and lemon juice.
  • Step 4
  • In a large bowl, combine 1/2 cup water, olive oil, and 1/4 teaspoon salt. Add the cauliflower and toss well. Place the cauliflower on a rimmed baking sheet and roast in the oven until tender, 20-25 minutes. Stir the hot sauce mixture again and pour it over the cauliflower, using tongs to coat.
  • Step 5
  • Bake until the sauce begins to simmer and brown around the edges, another 5-7 minutes. Serve the cauliflower hot with the cheese sauce for dipping.
