A side dish that's easy to make in the oven in one pan is Guy Fieri's golden cauliflower. He adds a four-spice blend, including aromatic cumin seeds and turmeric, to this dish, then roasts it in the oven and serves it with a vibrant squeeze of lime.


Ingredients:

  • 1 head of cauliflower, separated into florets
  • 1 can (540 g) chickpeas (drained)
  • 1 tbsp. ground turmeric
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1/4 tsp cayenne pepper
  • 1/4 cup vegetable oil
  • 1 tbsp. grated fresh ginger
  • 1/2 sweet onion, sliced ​​into half rings
  • Sprigs of fresh cilantro, for garnish
  • Juice of 1/2 lime
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

  • Preheat oven to 205°C.

  • In a dry skillet over high heat, toast the coriander, turmeric, cumin and fennel seeds, and cayenne pepper until fragrant, 2 to 3 minutes.

  • Pour oil into a large bowl, then add the toasted spices. Add the ginger, cauliflower, chickpeas, and onion, and mix well.

  • Place on a baking sheet, season with salt and pepper. Bake in the oven for 30-35 minutes, until the cauliflower is tender and golden brown. Serve with cilantro sprigs and a squeeze of fresh lime.
