Low-calorie kohlrabi is an excellent ingredient for healthy side dishes. It's also a great substitute for potatoes, as long as it's prepared deliciously. Round kohlrabi stalks are cut into equal-sized wedges, tossed with olive oil, salt, and cayenne pepper, and baked until golden brown. Before serving, garnish with grated Parmesan cheese and chopped fresh parsley. Serve as a side dish with any meat, fish, or poultry dish.

Peel 6 kohlrabi and slice into 1-inch-thick wedges; toss on a rimmed baking sheet with 2 tablespoons olive oil, 3/4 teaspoon coarse salt, and a pinch of cayenne pepper. Bake in the oven at 450°F (230°C), stirring every 10 minutes, until soft and golden, about 30 minutes. Toss with 3 tablespoons Parmesan and 1 tablespoon finely chopped parsley.
