If you're making a salad or side dish with boiled cauliflower, it's much quicker to cut the head into "steaks" instead of separating it into florets. Once the cauliflower is tender, it will fall apart into more manageable pieces when mixed with other ingredients. Drizzle it with a lemon dressing for a more pronounced flavor, sprinkle with fresh herbs and grated Parmesan. Pine nuts add crunch. Serve the cauliflower as an appetizer or as a vegetable side dish with meat dishes.

Core 2 large heads cauliflower and cut into 1/2-inch-thick “steaks.” Steam the cauliflower until tender, 30 to 40 minutes. Transfer to a large bowl and let cool for 15 minutes. Whisk together 1 teaspoon grated lemon zest, 1/3 cup each lemon juice and olive oil, and 2 1/2 teaspoons coarse salt; pour the dressing over the cauliflower and toss. (The cauliflower will fall apart.) Let stand 10 minutes. Add 1 cup fresh parsley, 1/2 cup toasted pine nuts, and 2 1/2 ounces grated Parmesan; toss. Drizzle with olive oil.
