In fact, cauliflower can be cooked either on the grill or in the oven—it doesn't matter, because the most important thing that makes it taste amazing is the sauce! Made with mayonnaise, chili sauce, and honey, it has a mild, sweet-spicy flavor and pairs beautifully with neutral cauliflower. Simply toss the baked florets in the sauce and serve as an appetizer or side dish.

Cooking the dish according to the recipe:

  1. Preheat oven or grill for indirect heat to 200°C.
  2. Cauliflower:

Lightly brush the cauliflower with oil. If baking, cut into florets and arrange on a baking sheet lined with parchment paper or nonstick foil. Sprinkle with salt, black pepper, and paprika, if using.

  3. Place the cauliflower stem-side down over indirect heat and roast until golden brown and tender when pierced with a fork, about 40 minutes. Bake in the oven until golden, 20-25 minutes.
  4. Meanwhile, prepare the sauce.:

In a medium bowl, combine mayonnaise, chili sauce, honey, and Sriracha sauce. Taste and season with salt and pepper.
  5. Cut the cauliflower into large florets and place in a large bowl. Pour the sauce over it and toss to coat evenly. Transfer to a serving platter. Sprinkle with green onions, drizzle with lemon juice, and serve hot, warm, or cold.
