With this broccoli recipe, you'll get deliciously crispy, fried florets instead of a handful of wilted florets. The key is in the roasting method: place the broccoli on a preheated baking sheet in a very hot oven. Olive oil, onion, garlic, lemon zest, and spices will bring the broccoli's flavor to life. Asiago cheese makes it even more delicious. Sprinkle the broccoli with grated cheese immediately after removing it from the oven while it's still hot, and serve immediately as a side dish with meat or, perhaps, as a beer snack.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 8 cups broccoli florets (2-3 large heads)
  • 5 tbsp. l. olive oil
  • 4 large cloves garlic, coarsely chopped
  • 2 large shallots, coarsely chopped
  • 1/8 - 1/4 tsp red pepper flakes
  • 1/4 cup finely grated aged Asiago cheese
  • Zest of 1 lemon (about 2 tsp)

Cooking the dish according to the recipe:


  1. Place a baking sheet with sides in the oven and preheat to 220°C.
  2. In a large bowl, combine the broccoli, olive oil, garlic, shallot, 3/4 teaspoon salt, and red pepper flakes. Toss to coat. Transfer to a preheated baking sheet and spread in a single layer.

  3. Roast until the broccoli florets are golden brown at the tips, the stems are crisp-tender, and the shallots are caramelized, about 20 minutes, stirring halfway through. Immediately sprinkle with Asiago cheese and lemon zest. Season with salt if needed. Transfer to a serving platter and serve.
