This broccoli side dish with a delicious cheese crust will satisfy even those who consider themselves broccoli haters. The mixture of grated sharp cheddar, breadcrumbs, green onions, and nutmeg imparts amazing flavor and crunch to the roasted vegetables. This is especially true if you choose Japanese panko breadcrumbs. They are larger, fluffier, and have a more intense crunch. Sprinkle the mixture over the broccoli a few minutes before serving and let it melt. Serve with any meat dish or as a healthy snack.


Ingredients:

  • 1 head of broccoli
  • 0.5 cups breadcrumbs
  • 1 cup grated cheddar
  • 1 bunch green onions, chopped
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cut 1 large head of broccoli into long florets. Toss on a baking sheet with 2 tablespoons of olive oil and season with salt. Roast in the oven at 450°F (230°C) until tender, 15 minutes.
  • Step 2
  • Mix 0.5 cups of breadcrumbs (preferably panko breading) with 1 cup grated sharp cheddar, 1 bunch chopped green onion, 1 tablespoon olive oil, and a pinch of nutmeg. Sprinkle the broccoli mixture over the broccoli and roast for another 15 minutes.
