Warm, crispy bread with melting cheese will brighten up any meal. Serve it instead of regular bread with soups, stews, salads, or simply as an appetizer. Everyone loves this bread; its aroma alone lifts the spirits. Slices of bread are first brushed with fragrant garlic-oregano oil, baked until crisp, then sprinkled with grated cheese and reheated in the oven until the topping melts. For a fantastic flavor, use a blend of cheeses, such as Italian Parmesan, Asiago, and gooey mozzarella.

Recipe:

Slice a loaf of Italian bread in half lengthwise, then in half crosswise. Combine 3 tablespoons olive oil, 1 minced garlic clove, and 1/4 teaspoon dried oregano; brush the cut sides of the bread and bake in the oven at 400°F (200°C) for 10 minutes. Combine 2 tablespoons grated Parmesan cheese with 1 cup grated Asiago cheese and 1 tablespoon grated mozzarella; sprinkle on the bread and bake until the cheese is melted, about 15 minutes.
