A recipe for oven-baked chicken thighs with a lemon mustard sauce. The meat is baked in the oven, brushed with a mixture of mustard, lemon juice, garlic, thyme, and olive oil. Then, it's cooked through with broccolini.
The dish is served with mashed potatoes prepared with sour cream, butter and chives.

Ingredients:

  • 8 bone-in chicken thighs with skin (about 1/125 g)
  • 675 g of yellow potatoes with light skin, peeled and cut into quarters
  • 1 bunch broccolini, ends trimmed
  • 1/2 cup sour cream
  • 3 tbsp (45 g) unsalted butter, room temperature
  • 2 tbsp. chopped onion cutter
  • Freshly ground pepper
  • 1 tbsp Dijon mustard
  • Juice of 1 lemon
  • 2 grated garlic cloves
  • 1 tbsp. extra virgin olive oil
  • 1 teaspoon chopped fresh thyme
  • Coarse salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 230 degrees.

    Place the potatoes in a saucepan and cover with cold water. Season with salt. Bring to a boil, then reduce heat to medium and simmer for 15 minutes, until the potatoes are tender. Pour 1/4 cup of water into a measuring cup, drain the rest, and return the potatoes to the saucepan.

    Add sour cream, butter, pepper, and the reserved cooking liquid. Mash the potatoes with a potato masher or a fork, stir in the onion, and season with salt and pepper to taste. Cover the mashed potatoes to keep warm.
  • Step 2
  • Meanwhile, place the chicken thighs skin-side up on a baking sheet, season with salt and pepper. Bake for 20 minutes, then remove from the oven.
  • Step 3
  • Mix mustard, lemon juice, garlic, 2 teaspoons olive oil, and thyme. Brush the meat with the mixture and arrange it around the edges of the baking sheet.

    Toss the broccolini with the remaining 1 teaspoon of olive oil and place in the center of the baking sheet. Season with salt and pepper. Bake for 10 minutes, until the chicken thighs are cooked through and the broccolini is tender. Serve with mashed potatoes.
