Preparation:

    Step 1
  • Place the potatoes in a saucepan and fill with water to a level of 3 cm above the potatoes; add salt. Bring to a boil, then simmer for about 20 minutes. Drain the water and let the potatoes cool.
  • Step 2
  • Meanwhile, preheat the oven. In a medium bowl, combine the ground beef, sausage, breadcrumbs, egg, 1/2 cup chicken broth, 1/2 teaspoon salt, and a pinch of pepper; mix with your hands until smooth.

Form 12 meatballs (about 5 cm each) and place on a baking sheet lined with parchment paper. Bake until golden brown, about 7 minutes.
  • Step 3
  • Meanwhile, melt 1 tablespoon (15 g) of butter in a large saucepan or Dutch oven. Add the mushrooms, 1/2 teaspoon of salt, and a pinch of pepper. Cook for about 8 minutes, until the mushrooms are softened. Sprinkle with flour and stir. Add the wine and bring to a simmer.

Add 1 cup of chicken broth, bring to a boil again, then reduce heat to medium and add the meatballs. Let it simmer, stirring occasionally, while you mash the potatoes.

Add the remaining 5 tablespoons (75 g) butter and 1/2 cup chicken broth to the potatoes and stir. Season with salt and pepper. Stir the parsley into the meatball mixture. Serve the meatballs with mashed potatoes.
