Turkey meatballs

This recipe makes these lean turkey meatballs even juicier and healthier, thanks to the generous addition of spinach, celery, onion, and bell pepper. Grated Parmesan cheese adds a firmer texture and a unique flavor. The meatballs are simmered in a tomato marinara sauce and served with cooked spaghetti. Form them into small balls, and they'll be ready in less than 10 minutes. These meatballs are a hit with both adults and children.


Ingredients:

  • 450 g of ground turkey
  • 2 tbsp. l. olive oil
  • 1 onion, finely chopped
  • 1 stalk celery, finely chopped
  • Half a small red bell pepper, seeded and finely chopped
  • 2 cloves garlic, finely chopped
  • 0.5 cup quick-cooking rolled oats (not instant)
  • 0.5 cup grated Parmesan + extra for serving
  • 1 teaspoon Worcestershire sauce
  • 4 tbsp. ready marinara sauce
  • 1 package 280g frozen chopped spinach, thawed and squeezed out excess liquid
  • Hot boiled spaghetti, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat the olive oil in a large, wide saucepan over medium-high heat. Add the onion, celery, bell pepper, and garlic and cook, stirring frequently, until softened, about 5 minutes. Transfer to a large bowl and let cool. Do not wash the saucepan.
  • Step 2
  • Meanwhile, add ground turkey, oats, Parmesan, Worcestershire sauce, spinach, 0.5 teaspoon salt, and 1/4 teaspoon black pepper to the cooled vegetables. Mix well and form into 24 small meatballs.
  • Step 3
  • Pour the marinara sauce into the pan and bring to a boil. Add the meatballs, cover, and simmer, stirring once or twice, until cooked through, about 8 minutes.
  • Step 4
  • Serve the meatballs with the sauce over the spaghetti and garnish with grated Parmesan cheese.
