These meatballs are inspired by the popular spicy Buffalo wings. Unlike fried chicken wings, oven-baked meatballs are lighter and lower in calories, yet still offer the perfect combination of chicken, tangy butter, and aromatic celery mixed with the ground chicken. Serve these juicy, spicy meatballs as an appetizer with traditional Buffalo blue cheese dipping sauce and celery sticks.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Meatballs

  • 450 g of minced chicken
  • 90 g unsalted butter
  • 0.5 cup hot sauce
  • 3/4 cup breadcrumbs
  • 1/3 cup chopped celery
  • 1 egg
  • Half a small onion, grated

Dipping sauce

  • 0.5 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled blue cheese
  • 2 tsp red wine vinegar
  • Celery stalks, for serving

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C and spray a rimmed baking sheet with cooking spray.
  2. Meatballs:

    In a small saucepan, melt the butter over medium heat. Stir in the hot sauce, remove from heat, and let cool to room temperature.

  3. In a large bowl, combine the ground chicken, breadcrumbs, celery, egg, onion, and 1 teaspoon salt. Add 2/3 cup of the cooled hot sauce (set the rest aside) and stir. Form the meat mixture into 2-inch meatballs (about 18 total) and place them on the prepared baking sheet.
  4. Bake until cooked through, about 20 minutes. Eight minutes before done, brush the meatballs with the remaining butter and hot sauce mixture.
  5. Sauce:

    In a small bowl, combine sour cream, mayonnaise, crumbled blue cheese, and wine vinegar. Season with salt and pepper to taste.
  6. Serve the meatballs with the sauce and celery sticks.
