Corn fritters are plump, savory pancakes filled with juicy corn kernels and fragrant greens. They're perfect for breakfast or a mid-day snack. This recipe works with any corn you have on hand: canned, thawed, or off the cob, boiled or grilled. Fritters are easy to make with just a few ingredients. Serve with Greek yogurt or sour cream.


Ingredients:

  • 3/4 cup flour
  • 0.5 cups of milk
  • 2 eggs
  • 1/4 cup cilantro
  • 1/4 cup green onions
Substituting ingredients

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.

    Step 1
  • In a bowl, combine 3/4 cup flour, 1 teaspoon coarse salt, and 1/4 teaspoon each baking powder and black pepper. In another bowl, combine 1/2 cup milk and 2 eggs; stir into the flour mixture.
