Their bright, long pods look stunning when served, are quick and easy to prepare, and have an exquisite flavor. Start by blanching the beans in boiling water to brighten and soften them, then toss them in a hot skillet with onions caramelized in a mixture of butter and olive oil, fresh thyme, and crunchy almonds. Serve once the beans are heated through.


Ingredients:

  • 1.3 kg green beans, ends trimmed
  • 0.5 cups sliced ​​almonds with skins
  • 3 tablespoons unsalted butter
  • 5 tbsp. l. olive oil
  • 2 large onions, thinly sliced
  • 2 tablespoons chopped fresh thyme leaves
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Fill a large, deep-sided skillet with a little water, coming about 2.5 cm (1 inch) above the rim. Place over high heat and bring to a boil; add a large pinch of salt and the green beans. Cook for about 5 minutes, until the beans are still crisp. Drain and then transfer the beans to cold water to stop cooking. Set the beans aside while you prepare the onions.

  • Return the pan you cooked the beans in to the stovetop over medium heat. Add the almonds and cook, stirring occasionally, until golden brown, about 3-5 minutes. Remove the almonds from the pan and set aside. Return the pan to the heat, add the butter and olive oil, and cook until the butter melts. Add the onion, season with salt and pepper, and cook, stirring frequently, until the onion caramelizes, 20-25 minutes.

  • Add thyme and cook for another 5 minutes. Add the cooled green beans and almonds, stirring well. Season with salt and pepper to taste.
