These crostini are wrapped in bacon for more than just aesthetics. As they bake, the bacon drips directly onto the bread, crisping the slices, making them golden, crisp, and delicious. They pair wonderfully with a delicate topping of spinach, cream cheese, Parmesan, and mayonnaise. Serve these crostini warm at a party, and you'll be sure to see them disappear.

Cooking the dish according to the recipe:

  1. Preheat oven to 220°C.

In a medium bowl, toss the bacon with brown sugar until evenly coated. Spread the bacon on a baking sheet and bake until golden brown around the edges but still tender, about 7 minutes. Transfer to a plate. Wipe the baking sheet clean and spray with cooking spray.
  2. In a medium bowl, combine spinach, cream cheese, Parmesan, mayonnaise, garlic and 1/4 teaspoon pepper.

  3. Spread 1 tablespoon of the spinach mixture on each slice of bread and wrap it with a piece of bacon, tucking the ends under the bread (the bacon should form a belt). Arrange the crostini on the prepared baking sheet and bake until the bacon is deep golden, about 15 minutes. Serve the crostini warm.
