Treat your friends and family to crispy homemade brittle with the perfect sweet and salty flavor. To make it, you'll need a candy thermometer or deep-fry thermometer. Once the sugar mixture reaches the right temperature, stir in whole roasted salted peanuts and place on a baking sheet to set. Break it into pieces and serve, or divide into bags and give to friends. Handmade sweets are always a delight.

Ingredients:

  • 2 tbsp. sugar
  • 0.5 cup light corn syrup
  • 6 tablespoons unsalted butter, diced
  • 0.5 tsp of soda
  • 1.5 cups toasted salted peanuts
  • Special equipment: caramel or deep-fry thermometer
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Line a rimmed baking sheet with foil and spray with cooking spray.
  • Step 2
  • In a medium saucepan, combine the sugar, corn syrup, and 1/2 cup water. Attach a candy or deep-fry thermometer to the side of the pan. Bring the mixture to a boil over medium heat, then continue cooking until golden brown, reaching 350°F (170°C), about 15 minutes.
  • Step 3
  • Quickly remove the pan from the heat and whisk in the butter and baking soda until smooth (it will foam and bubble). Stir in the peanuts to distribute evenly.
  • Step 4
  • Spread the mixture onto the prepared baking sheet and quickly smooth it out with a silicone spatula to create a thin, even layer. Let it set, uncovered, at room temperature. Break the candied brittle into pieces and store in an airtight container.
