Fresh and crunchy homemade brittle will leave no one indifferent. It's easy to make, and the best part is you can use any nuts you like and customize the flavor every time. Try, for example, macadamia, walnut, pecan, or hazelnut brittle by mixing the toasted nuts with a sugar mixture until caramelized, then spreading them on a greased surface to cool. Once the brittle has hardened, break it into pieces, package them in pretty bags, and give them to loved ones for Christmas or New Year's.

Ingredients:

  • 1 cup of sugar
  • 1 cup light corn syrup
  • 1.5 cups toasted chopped nuts (hazelnuts, pine nuts, or any nuts you like)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine the sugar and corn syrup in a heavy-bottomed saucepan. Heat over medium heat, stirring frequently, until the sugar dissolves. Increase the heat to high and cook until the bubbling subsides and the mixture turns light amber, about 10 minutes.
  • Step 2
  • Add the nuts and cook for another minute. Quickly pour the mixture onto a baking sheet lined with a silicone mat (or greased parchment paper) and spread evenly with a spatula or wooden spoon. The mixture hardens quickly, so work quickly. Let cool and break the candied nuts into pieces.
