Wassail is an ancient English drink traditionally brewed and enjoyed at Christmas. Make your own wassail and fill your home with its warm, spicy aromas. Use ale and a bottle of Madeira as a base. Combine the spirits in a slow cooker, add the spices, heat, and turn off the heat to stop the brew from simmering. Then, stir the beaten eggs (pre-tempered) into the mulled wine and top with baked apples. The resulting drink is very warming, with a rich and complex flavor profile. Just what you need in the winter cold.


Ingredients:

  • 6 small Fuji apples, cored
  • 1 cup brown sugar
  • 1 cup of water
  • 2 liters of ale
  • 750 ml of Madeira red wine
  • 10 whole cloves
  • 10 whole allspice berries
  • 1 cinnamon stick, 5 cm long.
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 6 large eggs, separate the yolks from the whites
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • Place the apples in a 20 x 20 cm glass baking dish. Spoon brown sugar evenly into the center of each apple. Pour water into the bottom of the dish and bake until tender, about 45 minutes.
  • Step 3
  • Pour the ale and Madeira into a large slow cooker. Place the cloves, allspice, and cinnamon in a small cloth bag or cheesecloth, tie with kitchen twine, and add to the slow cooker along with the ginger and nutmeg. Set the heat to medium and heat the mixture to at least 120°F (48°C). Do not boil.
  • Step 4
  • Place the egg whites in a medium bowl and beat with a mixer until stiff peaks form. Place the egg yolks in a separate bowl and beat until light and foamy, about 2 minutes. Fold the egg whites into the yolks and mix with a hand mixer. Slowly pour 120-180 ml of the alcohol mixture from the slow cooker into the egg mixture, beating with a hand mixer on low speed. Pour the entire mixture into the slow cooker and whisk.
  • Step 5
  • Add the apples and baking liquid to the mulled wine and stir. Pour into cups and serve.
