Vossail is a hot English cider drink traditionally served at Christmas, rooted in ancient rituals designed to ensure a bountiful apple harvest the following year. Whole baked apples floating on the surface give this warming holiday drink a cozy, homey feel. Serve Vossail as is, or, if desired, with a splash of cognac. It's the perfect treat for family gatherings and winter house parties.

Ingredients:

  • 1 cup light brown sugar
  • 6 Fuji apples, cored
  • 4 bottles of 0.33 l dry apple cider (alcoholic)
  • 2 bottles of 0.33 l pale ale beer
  • 2 cups natural non-alcoholic apple cider (unfiltered apple juice without sugar)
  • 1 cup Madeira (fortified dessert wine)
  • 10 whole cloves
  • 10 whole allspice berries
  • 4 cinnamon sticks + extra for serving
  • 2 wide strips of orange zest and orange wedges for serving
  • 2 wide strips of lemon zest
  • 0.5 tsp ground ginger
  • 0.5 tsp. freshly ground nutmeg
  • Additionally: gauze
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 350°F (175°C). Spoon sugar into the center of each apple, then place in a 9-inch (22 cm) square baking dish and cover with 1 cup of water. Bake until very soft, 1 to 1 1/2 hours.
  • Step 2
  • Meanwhile, pour all the cider, pale ale and Madeira into a large saucepan and bring to a gentle simmer over medium heat.
  • Step 3
  • Place the cloves, allspice, cinnamon sticks, and citrus zest in a piece of cheesecloth and tie tightly. Add to the pan along with the ginger and nutmeg. Reduce the heat and simmer until the liquid is fragrant, about 1 hour.
  • Step 4
  • Add the baked apples and any juices to the pan and stir. Remove the cheesecloth.
  • Step 5
  • Serve the drink warm in mugs with an orange slice and a cinnamon stick.
