This salad is made with smooth-skinned English cucumbers that don't require peeling. Slice them, season with salt, and drain. Then toss the salad with a dressing of rice vinegar, sesame oil, soy sauce, garlic, and red pepper, giving it an Asian flavor with spicy, sweet, and tangy notes.

Slice 1 cucumber. Sprinkle with 1 teaspoon coarse salt; let sit for 10 minutes. In a large bowl, combine 1 tablespoon rice vinegar, 2 teaspoons each sugar and soy sauce, 1/2 teaspoon sesame oil, 2 chopped green onions, 1 minced garlic clove, and a pinch of red pepper flakes.
