For this elegant, spicy cocktail, mulled wine is brewed with unfiltered apple juice (American apple cider) and spices, then refrigerated with finely chopped apples. Serve very chilled in champagne flutes, diluted about half with dry sparkling wine.

1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.

1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 1 liter of apple cider (unfiltered apple juice without sugar)
- 3 cinnamon sticks
- 1 piece fresh ginger root, crushed
- 3 cloves
- A pinch of nutmeg
- 1 firm red apple (Fuji, Gala, etc.), cut into small cubes
- 1 firm green apple (such as Granny Smith), diced into small cubes
- Juice of 2 lemons
- 1/4 cup sugar
- 1 bottle (750 ml) of dry sparkling wine Cava

Cooking the dish according to the recipe:
- Combine the apple juice, cinnamon sticks, ginger, cloves, and nutmeg in a saucepan and heat over medium heat. Bring to a boil, then reduce the heat to low and simmer until the liquid has reduced by half, about 30 minutes. Set aside to cool, then strain.
- In a large bowl, combine the apples, lemon juice, and sugar. Place in a saucepan with the apple juice and refrigerate. When ready to serve, fill champagne flutes about halfway with the apple juice mixture and top with sparkling wine. Stir and serve.
