Preparation:

    Step 1
  • Heat the blackberries, sugar, and water in a small saucepan over medium-high heat. Mash the mixture with a potato masher until it reaches a thick, smooth consistency (about 8 minutes).
  • Step 2
  • Strain the blackberry mixture through a sieve into a bowl, straining the pulp and juice to remove any seeds. Chill in the refrigerator for at least 10 minutes.
  • Step 3
  • Fill a shaker with 2 tablespoons of blackberry puree, 2 tablespoons of mint leaves, 60 ml of gin, 1 tablespoon of lime juice, and a handful of ice. Shake vigorously 5-6 times until the drink is ice-cold. Strain the mixture into a tall glass.
  • Step 4
  • Pour in 180 ml of ginger ale and stir briefly. Repeat for the remaining 3 servings. Serve the cocktail with a scoop of sorbet or ice cream on top.
