Ingredients:

  • Strawberry ice cream, recipe below
  • Two 600ml bottles of chilled cherry soda
  • Whipped cream and maraschino cherries for garnish

Strawberry ice cream
  • 1 cup heavy cream
  • 0.5 cups of 10% cream
  • 1 tsp vanilla extract
  • 0.5 cup granulated sugar
  • 2 tablespoons of honey
  • 3 large egg yolks
  • 1 cup freeze-dried strawberries, crushed into powder
  • Red food coloring, optional
  • Special equipment: freezer
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • For each serving, scoop 2 scoops of ice cream into glasses. Top with desired amount of soda. Garnish each serving with whipped cream and a cherry. Serve immediately.

  • Strawberry Ice Cream:


    Combine the heavy cream in a small saucepan and heat over medium-low heat until bubbles form around the edges, about 3 minutes. Remove from heat and stir in the vanilla.

  • Meanwhile, in a medium bowl, beat the sugar, honey, and egg yolks with a mixer until pale yellow. While whisking, gradually add a little of the hot cream. Then add the remaining cream and whisk until smooth. Return the mixture to the saucepan and stir in the strawberry powder. Cook, stirring constantly, over medium heat until the cream thickens and coats the back of a wooden spoon. Add a few drops of red food coloring, if desired. Let cool completely in a bowl of ice, then pour into an ice cream maker and prepare the ice cream according to the manufacturer's instructions. Transfer the soft-serve ice cream to a container, seal tightly, and freeze for 3-4 hours.
