Are you stuck in your dorm room for the holidays? Or just running out of room on the stove? Either way, there's nothing wrong with making a festive side dish in the microwave.

Ingredients

All you need are 3 large brown-skinned potatoes (about 1.1 kg), 3/4 cup whole milk, 4 tablespoons unsalted butter, salt and pepper.
Peel the potatoes

After peeling the potatoes, cut them crosswise into slices about 2 cm thick.
Cook until soft.

Place the potato slices in a microwave-safe bowl. Cover with plastic wrap. Microwave until soft, about 20 minutes.
Let it stand

Let stand without removing the film for 5 minutes.
Meanwhile…

Warm up the milk.
Start warming up

Add milk to the potatoes along with butter and begin mashing.
Make a smooth puree

Mash until you get a fairly smooth consistency, then season with salt and pepper.
For the gravy

You will need 2 tablespoons unsalted butter, 2 tablespoons all-purpose flour, 1 cup chicken broth, 1/3 cup heavy cream, and 2 teaspoons Worcestershire sauce.
Heat the butter

Place the butter in a suitable container and microwave for about 2.5 minutes, until melted and bubbling gently.
Then…

Add flour.
Whisk in the flour

Beat until completely combined.
Cook in the microwave

Microwave the butter-flour mixture, whisking once halfway through, about 3-4 minutes, until golden brown and nutty in aroma.
Classic gravy

Whisk in the chicken broth, cream, and Worcestershire sauce. Then microwave again for about 3 minutes, stirring every 30 seconds, until thickened and bubbly. Season with salt and pepper.
Bon appetit!

Serve mashed potatoes with quick gravy and sprinkle with sliced green onions or chives, if desired.
