When making mashed potatoes, choose potatoes with a high starch content, which will make the side dish fluffier. Boil the potatoes in their skins, then peel and mash them with cream or milk to ensure a creamy, not watery, mash.

Cooking the dish according to the recipe:
- Place the potatoes in a large saucepan, add enough cold water to just cover, and season generously with salt. Bring to a boil over medium heat and simmer, uncovered, until the potatoes are tender, 45-55 minutes.
- Drain the potatoes, peel them with an oven mitt or kitchen towel, and transfer them to a large bowl. Add the butter, warm cream, 1.5 teaspoons of salt, and a few turns of the black peppercorns. Mash with a potato masher.
