If you love corned beef fries but want to make your favorite dish healthier, swap out the canned corned beef for lean ground pork and the potatoes for more nutritious sweet potatoes, rich in beta-carotene and vitamin C. Season with natural spices and serve with a fried egg. The runny yolk makes a delicious sauce for the fried sweet potatoes.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 large sweet potato, cut into 1cm cubes.
  • 2 tsp rapeseed oil (canola)
  • 450 g of cooked meat
  • 2 teaspoons fennel seeds
  • 1 teaspoon crushed red pepper flakes
  • A pinch of ground black pepper
  • 4 cloves garlic, crushed
  • 1 small onion, chopped
  • 0.5 tsp coarse sea salt
  • 4 eggs

Cooking the dish according to the recipe:


  1. Bring a medium saucepan of water to a boil. Add the sweet potatoes and cook until tender, about 10 minutes. Then drain and set aside.
  2. Heat oil in a large nonstick skillet over high heat. Add the pork and cook, stirring occasionally, until no longer pink, about 5 minutes.

  3. Reduce heat to medium, add fennel seeds, red and black peppercorns, and stir for 1 minute. Add the garlic and onion to the pan, stirring constantly, and cook until the onion is translucent, about 5 minutes. Add the sweet potato and season with salt to taste. Cook until the sweet potato and meat are browned.
  4. Heat a large nonstick skillet over medium heat. Fry the eggs sunny-side up for 3-4 minutes. Cover the skillet and remove from the heat to warm through the yolk, but not quite set (it should still be soft and runny), for 1 minute.
  5. Divide the sweet potatoes among four plates and top each serving with a fried egg.
