This hearty Middle Eastern-inspired salad is filled with dried fruit and fresh grapes, the sweetness of which is perfectly balanced by cayenne pepper. Pine nuts, plenty of fresh herbs, and olive oil make this couscous salad not only delicious but also healthy. It's perfect for a healthy snack throughout the day.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 cups chicken broth
  • 1.5 cups quick-cooking couscous
  • 1 cup seedless grapes
  • 0.5 cups pine nuts or almonds
  • 0.5 cups chopped dried apricots
  • 0.5 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • 1/8 cup chopped fresh mint
  • 1 teaspoon of salt
  • 0.5 tsp ground black pepper
  • 0.5 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 0.5 cups olive oil
  • 0.5 cup lemon juice

Cooking the dish according to the recipe:


  1. In a medium saucepan, bring the broth to a boil and add the couscous. Remove from the heat and cover with a lid.
  2. Let the couscous sit to steam, then fluff with a fork and transfer to a large bowl.

  3. Add grapes, pine nuts, dried apricots, green onions, parsley, and mint. Add the remaining ingredients and let sit for 30 minutes before serving.
