Ingredients:

  • 600 g skinless and boneless chicken breasts (cut in half), no thicker than 2 cm.
  • 150 g mesclun salad mix
  • 1 cup chicken broth
  • 1 cup of water
  • 1/4 cup sliced ​​almonds
  • 1/2 cup yogurt
  • 2 tablespoons mayonnaise
  • 1 tsp curry powder
  • 1 cup red grapes, halved
  • 1/4 cup chopped cilantro leaves
  • 1 tbsp. l. olive oil
  • 1 teaspoon lemon juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.

    Step 1
  • In a medium saucepan, bring the broth and water to a boil. Add the chicken and simmer, covered, for 8 minutes at a low simmer. Turn off the heat and let the chicken sit in the cooking liquid, uncovered, for 20 minutes to finish cooking.

    Remove the chicken from the broth and cool completely in the refrigerator. Cut into 0.5 cm cubes. Toast the almonds in a small dry frying pan over medium heat for 2-3 minutes until fragrant and golden brown.

  • In a large bowl, combine yogurt, mayonnaise, and curry powder. Add chicken, grapes, cilantro, and salt and pepper to taste.
