These small gluten-free sandwiches are made with apple slices instead of bread. The appetizer is low-calorie, and the juicy apple adds a wonderful refreshment to the spicy curried chicken salad. Red apples, such as Pink Lady or Honeycrisp, work best in this recipe. But the more tart green Granny Smith is also a good option.
The recipes use measuring containers with the following volumes:

Ingredients for the recipe:
- 0.5 cup Greek yogurt, 2% fat
- 2 tablespoons mayonnaise
- 1 tbsp lemon juice
- 2 green onions, thinly sliced
- 1.5 tsp curry powder
- Half a grilled chicken, shredded, skin and bones removed (about 2 cups meat)
- 1/4 tbsp. chopped pecans
- 1/4 cup chopped parsley leaves
- 1 small stalk of celery, finely chopped
- 3 tablespoons golden raisins
- 3 large crisp apples, such as Pink Lady or Honeycrisp
- 8 small lettuce leaves

Cooking the dish according to the recipe:
- In a medium bowl, combine the yogurt, mayonnaise, lemon juice, green onions, curry powder, 1/2 teaspoon salt, and a pinch of freshly ground black pepper. Add the chicken, pecans, parsley, celery, and raisins and toss to combine. Cover and refrigerate until ready to use (up to 3 days).
- Core the apples and cut each into six to eight 1/4-inch-thick rounds (16 rounds total). Arrange 8 apple rounds on a lettuce leaf and top each with about 1/4 cup of chicken salad. Top with the remaining apple slices. Serve immediately.
