- Step 1
- Preheat oven to 100°C (212°F). Prick the sweet potato several times with a fork and microwave until softened, 7-10 minutes. Cool slightly, peel the potato, mash the flesh with a fork, and let it rest. Step 2
- Melt 1 tablespoon of butter in a skillet. Add ground pork, chili powder, and 1 teaspoon of salt. Cook, breaking up the ground pork, for about 3 minutes. Add the garlic, sweet potato, and green onions and cook, stirring, for another 2 minutes. Add the cilantro and season with salt. Transfer the ground pork to a bowl. Step 3
- Melt 1/2 tablespoon of butter in a skillet. Spread the filling on half a tortilla and sprinkle with cheese. Fold in half and fry the quesadilla until golden brown, 1-2 minutes per side. Transfer to a baking sheet and bake in the oven to keep warm. Repeat with the remaining tortillas. Serve the quesadillas with jalapeños and sour cream.
