These wraps are made in the style of lababa, a Southeast Asian dish featuring pork and plenty of fresh herbs. This recipe replaces the traditional ground pork filling with shredded roast pork. All ingredients can be prepared in advance, or you can use leftover pork and steamed vegetables. They also feature tender rice noodles and a simple sauce made with sweet chili sauce, fish sauce, and lime juice. Serve the filling in crisp lettuce leaves with fresh herbs and chopped peanuts.

Ingredients:

  • 110 g rice noodles
  • 2 tsp. dark sesame oil
  • 1/4 cup sweet Thai chili sauce
  • 2 tablespoons fish sauce
  • 2 tbsp lime juice (from 1 large lime)
  • 1.5 cups shredded pork roast
  • 1.5 cups steamed vegetables, such as green beans, cauliflower, broccoli, and thinly sliced ​​carrots
  • 1 large head of bibb lettuce
  • 0.5 cup fresh cilantro leaves
  • 0.5 cup fresh mint leaves, torn
  • 1/4 cup salted roasted peanuts, chopped
Substituting ingredients

Preparation:

    Step 1
  • Bring a large pot of water to a boil. Turn off the heat, add the rice noodles, and stir. Let sit until tender, about 3 minutes. Drain thoroughly, then rinse the noodles thoroughly under cold water. Shake out as much water as possible, then transfer the noodles to a medium bowl and toss with 1 tablespoon of sesame oil. Set aside and keep at room temperature.
  • Step 2
  • Meanwhile, in a small bowl, whisk together the chili sauce, fish sauce, lime juice, 6 tablespoons water, and 2 large pinches of salt until smooth.
  • Step 3
  • In a medium nonstick skillet, heat the remaining 1 tablespoon sesame oil over medium-high heat. Add the pork and cook, stirring occasionally, until heated through and lightly browned around the edges, about 6 minutes. Add the vegetables and continue cooking until heated through, about 2 minutes more. Add 2 tablespoons chili sauce mixture and toss to coat well. Cook for about 1 minute more.
  • Step 4
  • Tear 12-16 outer leaves from the lettuce head. Fill the lettuce leaves with rice noodles, the pork and vegetable mixture, and sprinkle with cilantro, mint, and peanuts. Serve with the remaining chili sauce mixture for dipping.

    Pork lab is traditionally seasoned with freshly squeezed lime juice, fish sauce, sugar, crushed red chili pepper, shallots, cilantro, mint, and toasted rice powder. We added sweet Thai chili sauce to all of these ingredients to give the meat filling a sweet and spicy flavor.
