Sweet potato

Sweet potatoes, or as they're known abroad, are a vegetable with a sweet, spicy flavor. Their tubers are used as food and are ideal for adding to spicy dishes. There are two types of sweet potatoes: one with bright orange flesh and the other with a pale creamy color.
Sweet potatoes are native to tropical regions of the Americas. Their tubers are rich in fiber, vitamins A, C, and B6, and carbohydrates. The orange tubers are rich in beta-carotene.
How and when can I buy?
Fresh sweet potatoes are available from October to March. Choose small tubers with a smooth surface. They will have a more tender flavor than larger ones.
Preparation
Sweet potatoes are baked, fried, or mashed. They are added to risotto or pasta.
This vegetable should be peeled with a potato peeler. The skin usually comes off very easily.
Instead of sweet potatoes, you can use regular potatoes or pumpkin when preparing dishes.
Storage
Tubers should be stored in a cool, dark place and used within a week of purchase.
