This appetizer uses sweet potatoes, which are sold sliced ​​and ready for deep-frying. Bake or fry them according to package directions, then top with a delicious Thai sauce. Its exotic flavor perfectly complements the sweetness of the crispy sweet potatoes. To make the sauce, all its ingredients—fish sauce, chili sauce, lime juice and zest, and brown sugar—are mixed with bacon fat rendered from frying. The fries are served on a large platter, drizzled with Thai sauce and topped with crispy bacon and fried onions. A delicious appetizer for a large group.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 package (450-550 g) frozen sweet potatoes for deep frying
  • 3 strips bacon, chopped
  • 2 tablespoons dark brown sugar
  • 1 tbsp fish sauce
  • 2 teaspoons Asian hot sauce (such as Sriracha)
  • 1.5 tbsp. l. lime pickle
  • 0.5 tsp grated lime zest
  • 2 tbsp chopped fresh cilantro
  • Fried onions or shallots, for serving

Cooking the dish according to the recipe:


  1. Bake sweet potatoes according to package directions.
  2. Meanwhile, fry the bacon in a skillet over medium heat until crisp, about 8 minutes, then transfer it with a slotted spoon to paper towels to drain. Remove the skillet from the heat and stir in the brown sugar, fish sauce, chili sauce, and lime juice and zest. Stir until the sugar is completely dissolved.

  3. Transfer the sweet potatoes to a serving platter. Drizzle with the chili sauce and sprinkle with bacon, cilantro, and fried onions.
