Ingredients:

  • 2 red bell peppers
  • 2 yellow bell peppers
  • 2 Chinese eggplants
  • 6 cloves of garlic
  • 1 tbsp. coriander seeds
  • 2 teaspoons fish sauce
  • 1/4 cup fresh lime juice
  • 1 tbsp. l. olive oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat grill to medium heat.

  • Step 2
  • Quarter the peppers and eggplant lengthwise and place in a large bowl. Place the garlic and coriander in a mortar and pestle and mash until a chunky paste forms.
  • Step 3
  • Transfer the pasta to the bowl with the vegetables. Add the remaining ingredients and stir.
  • Step 4
  • Place peppers on a hot grill and cook for about 5-7 minutes per side.
