Barbados-style baked sweet potato - a detailed recipe.


Ingredients:

  • 3 large tubers sweet potatoes
  • 1 tbsp. vegetable oil
  • 2/3 cup freshly squeezed orange juice
  • 1/4 cup brown sugar
  • 3 tablespoons freshly grated peeled ginger
  • 2 tablespoons Jamaican dark rum
  • 2 tablespoons melted butter
  • 2 tsp curry powder
  • 1/2 tsp allspice
  • 1/2 teaspoon habanero pepper powder (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 180°C. Wrap sweet potatoes in foil and bake for 30 minutes.

    Remove the foil, let the potatoes cool enough to avoid burning your hands, then slice them into 1 cm thick rounds. Grease a 23 x 33 cm ovenproof dish (preferably glass) with vegetable oil. Place the potato slices in the dish.
  • Step 2
  • In a small bowl, combine ginger and remaining ingredients and pour this mixture over the potatoes.

    Cover the pan with foil and bake the potatoes until almost tender, about 15-20 minutes. Remove the foil and bake for another 10-15 minutes, until the top begins to brown.
